By the time a vintage wine reaches you as a gift in an elegant wooden box, it has already been on an impressive journey. Wine has been produced since ancient times – today, however, with far more precision and focus on quality. It always begins with the careful selection of fully ripe grapes from a single harvest year. After picking, the grapes are separated from the stems and gently crushed so that the first juice can flow. The resulting must rests briefly, is clarified and then processed further.

Next, fermentation begins. The must is inoculated with yeast and fermented in tanks or barrels. The duration, temperature and type of barrel all help determine which aromas will develop. After the primary fermentation, the winemaker separates the young wine from the lees – a process known as racking. Depending on the style, the wine may then undergo further fermentation or continue to age in barrels before it is carefully filtered and finally bottled.

However, the journey does not end with bottling. This is when the long resting period begins that makes vintage wines so special. In the bottle they mature for many years or even decades, with fresh fruity notes evolving into deeper, more complex nuances. Because every year brings different climatic conditions, a unique flavour profile emerges that exists in exactly this form only in that particular vintage.
